I love vegetables, salads, etc... but I cook them a lot too... I like making veggie soups, my own spaguetti sauce,I sautee a lot... is it true that all nutrients get lost when you cook them? I've heard different opinions... I know some nutrients activate with heat (like in tomatoes for example) any information on this? thanks!
Im not sure if all of the nutrients are losts but ALOT of them are! I like cooked food too.....I just try to eat about 50% raw most days....some days less. Good ways to get raw into the daily diet is green smoothies, salads, juicing. I find it harder to eat raw in the winter when I like more warming foods. It's all based on how hot the food gets. I think there is a good balance in there somewhere!
I am sure if you boil vegetables, then all the nutrients stay on the water... but if you make some veggie soup... then that should be ok, right? cause you are taking the water in which the veggies were cooked... I usually just sautee my side dishes... my daughter will refuse to eat any raw veggies... only tomatoes! and carrots...
My son only eats raw tomatoes and carrotts too! I think they like them cause they are sweet and tomatoes are a fruit anyways. I didn't know that till recently. I think some of the nutrients are cooked out of the food and some are destroyed. I have heard it's best to try to consume the water you cooked in to use as broths for other things or just to drink to recapture the nutrients but even so......alot of nutrients are destroyed by the heat.
118 degrees will be what?? low medium heat? what if the veggies are sauteed?
Well, I do have the priviledge of having a community farm... where everything is rased locally!
do you eat raw potatoes? how do you cook them? I can do some of them... but some are hard to eat raw!
A lot of Nutrients are water soluble and are dissolved in water when cooked. That is why raw vegetables are the best. Steaming vegs is the way to go if you can. Soups do cook out nutrients are cooked out but stay in the broth that they are cooking in. Therefore when you eat the soups you are eating the nutrients.
If you steam vegs or cook in water save the broth for use in other foods.
One major factor in food nutrition is if the skin is left on since it contains most of nutrition. I guess if you drink the broth then all is not lost. Cooking vegetables above 108 degrees kills the digestive enzyme found in them which has greatly contributed to the obesity problem in US. This is why Kevin Trudeau advises people to take digestive enzymes to help maintain body metabolism. Life brings life. Only fresh fruits and vegetables contain active lifeforce (Chi). Eating the carcus of a dead mammal can only produce disease. Fish is ok because it contains omega oils.

Although I don't care if nutrients are lost during the cooking process. As long as it makes whatever meal I make taste better, i could care less.
There are certain vegetables that are very hard to digest unless lightly cooked. Some, like Bobby said, increase in nutritional value when cooked. Does that mean we should ignore this and eat all raw? Decide for yourselves!
HELLOOO, dam Im no genius as far as mainstream society is concerned but common sense has told me that "OUR DIVINE CREATOR" certainly could not have intended for us to eat HARD to eat vegetables without soaking or heating them in water to soften them. Why don't people actually think about things first before assuming that modern science has all the answers. Not saying they don't but just saying that time and time again history has shown us to have MADE SHYT UP for our own greed or sake of mass production. For example 'big pharma', lies and lies and lies some more without any spec of hope for them changing the way they chop and screw society with 'drugs, illness, and experimentation thru surgery on the human body/anatomy. In all my short years on earth, knowing what terrible things man does to harmless creatures and its own species, it is not at all hard to understand the earth, the world, if we had no scientist or doctors or chemists so called studying and experimenting, then telling us what their theories are.. For all we know 10years from now that theory will most likely be proven wrong but still considered to be true by ummm about 80% of the planet.
My point's conclusion is a simple question: Why would our Creator leave babies undernourished just because they have no teeth yet and cannot eat the majority of fruits and vegetables RAW??
I don't believe anything but nature. And even thats questionable nowadays, because big brother is a lunatic that will eventually destroy 'itself', half the planet, if not the entire thing with their vicious sick for profit propaganda, depopulation, I'm white so I'm smarter/better than the rest of the world, aged ole, self absorbed, selfish, non empathetic, 'WILLIE LYNCH' mentality/philosophy. I mean some of you sound so smart, but reveal so much when I actually disect what you write. But its all good, I don't mean to insult. Its just that look for example at that comments and discussion posts by some of the so called doctors on this site. They obviously do not have your best interest at heart. They either send you to a book, refer more than TOO MANY supplements and vitamins or 'cleansers' before they ever will reveal the common knowledge of nature. If electricity were gone today, we would still have fire from trees etc. and water to boil and cook our hard to devour foods. Unnatural substances would eventually be eliminated, when the people can get back to nature and or respecting it.

a little known fact is that raw foods also have toxins, phytic acid and enzyme inhibitors in them. Cooking can neutralise most of them. The healthiest people on the planet today are the Japanese and they cook their veggies for the most part at very high temperatures for short periods of time. This makes all the nutrients available while getting rid of most of the 'baddies' When making soups do you notice the 'scum' floating on top right about the time it starts simmering. There is a reason granny used boil up her veggies and then scoop this out. Certified organic or not, you will always get some scum/toxins coming out your veggies.
Also raw fruit and veg lose 50% of their nutrition 30 min or so after they're picked. They also don't contain very many enzymes which is why traditional peoples used to ferment them. It is a way of producing more beneficial enzymes as well as restoring vitamin and mineral content. There is a reason why cabbage is never eaten raw. It is full of goitrogens. Boiling it can neutralise just about all of these, and fermenting the cabbage into sauerkraut also neutralises many but not all. This is why iodine saturated foods were added to and fermented with the sauerkraut, like juniper berries. The extra iodine counteracts the goitrogen, rendering the food completely safe.
I've seen too many vegetarian raw foodies get gastro and sick almost on a regular basis from long term juicing. Especially with the cruciferous vegetables (cabbage, brocoli, kale etc)
Raw juicing for cleansing, yes. Phytic acid in the veggies can latch onto heavy metals in the system first, and they get excreted. When these heavy metals are gone, they latch onto vital nutrients.
Food preparation is key to raw foods. Soak, and dehydrate your nuts, legumes and grains. Lacto-ferment your fruits and veggies. By doing this you're also taking in beneficial bacteria necessary for a healthy digestive system.
I agree with Chanel/Ok, we need to look a little further back and understand how traditional peoples used to prepare their whole and nourishing foods and why. They certainly understood mother nature much better than we currently do.
