Kim:

Simple: Menu planning is the key.

What you want to do is plan simple menus. For example, an evening of spinach spaghetti and organic sauce doesn't cost all that much more than the processed stuff. I always put together a couple of salad dinners in my weekly menu. Broiled chicken breast and steamed carrots (pour some honey on top of the carrots!!). If you keep the menus simple, and try not to go extravagant, eating organic becomes pretty affordable.

Eventually, you'll be able to phase out the processed conventional foods, a little at a time, until the conversion is complete (spices take the longest time to switch over).
