Winter blues, eating, exercising, ready to give up... there's no hope!

Ok, a little overdramatic on my part, but it got you to read this.

Getting a little discouraged due to the bad weather (hard to drive to Whole Foods which is 15 miles away) and it seems like there is nothing left to eat healthy (on a budget).

I thought at least with Subway, well, ok, it can't be THAT bad. Until I looked at the ingredients on their website.

Anyway, I guess I am just looking for some recipes and tips on how to keep up with organics when you have limited resources.

We do have a Super Target, Meijer, and Dominick's, which provide limited amounts of organics.

Obviously it's harder to exercise when there is ice all over the roads and sidewalks.

Who else is experiencing the winter blues?

Hi Emily ... I live in north/central Alberta, Canada and I'm definitely much more a winter person than summer. I have a 3 and 4 year old and getting outdoors everyday is a MUST (not only for our vitamin D dose, but also my sanity). Tobogganning, skating, road hockey, shovelling snow, walking - as long as you're dressed for it - lets you be a kid again. I strongly agree with Michelle about do your best and be happy with that -- as women I think we tend to "beat ourselves up" too much and please bear in mind Christmas season is quite stressful -- with additional social and financial commitments. Cook once and let it stretch for many meals - and freeze alot which saves time at mealtime. We have a weekly farmer's market which is a great place to get fresh produce.

Amen to that! We live in the country and anytime it even rains the electricity goes out! HA!

I hear ya Michelle. I live out in the country too. Wow you have to drive further than I do, to get organic foods. It's about 30 miles to the Food co-op I just joined. I too grow a lot of stuff. Those canned tomatoes are coming in handy now........ I also get those winter blues. I stay inside a lot during the winter. Oil painting helps me, and exercising. But also just to go outside( especially when the sun is shinning), and take some deep breaths and stretches......stay warm everyone.

I completely understand! We are stuck here, and the storm isnt supposed to end until tomorrow. or thursday. I ran out to the little market here in town yesterday before the second storm hit. They dont have much of what I needed. Our roads arent plowed and all schools across the valley are closed. There is no way out of here (the valley) without going over the passes. And most of them are under chain laws right now. Lucky for me we have a few small towns spaced out every 15-20 miles....cant get to any of them anyway right now. Not even the Safeway in the next town has any ground turkey. I have to drive 70 miles round trip on Friday to get some...so I can have a change from chicken and fish !!! I love to walk and obviously cant get out. On top of that, Im stuck here with a terrible cold and havent slept in 3 nights. Not depressed....yet. Just terribly tired and overwhelmed.

I've been experiencing the winter blues something terrible myself! If I don't get out and exercise atleast three days a week and keep myself occupied and busy it can get to me! Try to buy some full spectrum lighting for atleast two of the rooms you most frequent! Im going to do that this weekend because I have been having crying spells for no reason!

LOL! I need to sing more often Speaking of houses...you should see mine right now....it's a disaster! My two year old is constantly pulling stuff out and I have to go behind him and put it back constantly! I think my worst months are generally Janruary and February! But im feeling it start early this year!

Hey there! YEah, I think being cooped up with an non agreeable two year old and having no sunshine, then just being stuck at home really gets to me. I saw the ones on Mercola but they are WAY too expensive. Saw some for $7.99 a piece at the healthfood store. They are not energy efficient but I think as long as you just use them during the winter and switch back to the energy efficient bulbs it's not that bad. Do you guys have power Nedalie since the ice storm?

Good ideas for the meals! I will have to remember those for future use. I cooked a grass fed beef roast in my crockpot all day yesterday with onions, garlic, carrotts, potatoes, etc. Totally organic and YUMMY!

Michelle, sounds like you and I are in the same situation sort of. Cooking for 2. Whole Foods in range, but not something to do on more than a weekly basis, tops.

Seems like all we've been eating is Italian (spaghetti and meatballs, lasagna, etc.) and soups. I guess thats what being in the North is all about. We just moved from Florida.

I make a killer cumin chicken. You can use the marinade for shrimp and beef too. Very easy to make and you can just broil the meat (we prefer to cut up the chicken and beef and scewer it).

1 large (I think it's about 12 to 16 ounces) of tomato sauce
1 can (the can from the tomato sauce) of water
pinch of salt, pepper, a chopped up clove of garlic (or just sprinkle some garlic powder)
1 to 2 tablespoons of cumin
A squirt or two of lemon juice (or more if you so desire)

Add all ingredients to a saucepan and bring to a low boil. Then simmer for at least 15 minutes. Obviously the longer you simmer, the more the flavors mix together.

Remove from heat and chill (I pop it in the freezer for 20 minutes to save time).

Then just marinade your meat/shrimp (I guess fish would work too, though I've never tried it) and broil.

When we scewer, we add onions and peppers which just brings out the most amazing flavors.

Except for the time of scewering everything, this meal is super quick and simple.

We eat it with couscous...

The marinade is a mediterranean flavor.

Obviously very healthy and a nice change from the typical winter foods cooked in pyrex or crock pots.
