Its all in the slippery elm powder!
Just made the most awesome mayonnaise and would like to share it. By the way all ingredients are free ranging, cold pressed, raw etc etc..
Ingredients:
1 whole egg - room temp
1 egg yolk - room temp
2 teaspoons dijon mustard
2 tablespoons fresh squeezed lemon juice
1 tablespoon whey (or kefir whey if you have it)
1 tablespoon honegar (equal parts honey and apple cider vinegar)
1 cup Macadamia nut oil.
1/2 tspn suma powder
1/2 tspn slippery elm powder
big pinch celtic sea salt
Directions:
Place all ingredients apart from the oil into your blender and blend for about 30 seconds until smooth. Then gradually add the oil while blender is running. It will soon thicken up due to the slippery elm powder. Check for taste. Add more salt or lemon or honegar if needed.
Pour into jar, and seal the lid. Leave for 7 hours before transferring to the fridge. Will last for several months. Makes roughly one and a half cups.
The slippery elm, suma and macadamia nut oil give the mayonnaise a subtle lovely nutty flavour as well as producing a really great consistency.
