I am a big believer in eating well. I got a lots of good recipe that required little $$$, that children love, full of protein. i.e. black beans, lentils soup, spinach pie etc. If you are interested I will send you my children favorite one. Cheers ! Nanoo

Hi Karen,
here some cheap recipe
Lentil Soup
3 c dry lentils
7 c water
7 garlic crushed
2 c chopped onions
1-2 c carrots or potatoes diced
optional: any fresh herbs you may have i.e. basil,thyme,oregano,cilantro,soy sauce.
sea salt, fresh ground pepper
2-3 ripe tomatoes
1- soak lentil overnight or 1-2 hours
2) Place lentils,water(broth) sea salt in a pot. Bring to boil, cook slowly and partially covered for 20-30 min.
3) add vegetables (except tomatoes)herbs and black pepper. Partially cover, and let simmer peacefully another 20-30 min. stirring occosionally.
4) Heat a med. saucepanful of water to boiling. Drop in the tomatoes for 10 sec. then take them out, peel off the skins, and squeeze out the seeds. Chop the remaining pulp and add to the soup. Let the soup cook for at least 5 min. more.
5) Serve hot with a drizzle of red wine vinegar on top (if you don't have use your soy sauce, be creative...
p.s. if you don't have fresh tomatoes use a can
The idea is to use what you have in the fridge. Always have garlic, use your veg. broth from your veggies
Lentil can be used on top of basmati rice. The house will smell good for hours and it is always good, easy and keep well. You can freeze the leftover. That is cheap.
>Spinach pie
quick , for breakfast, lunch or dinner
5 ingredients
3 c of spinach ( or packages of frozen)
1/2 packages of cream cheeze
2 springs onions
4 eggs
2 crush garlic cloves
sea salt, fresh pepper
Mix all together, put in a pie plate, grate montery jack cheeze (or whatever you have for cheeze at 375 F - 45 min. You can freeze.
serve with fresh salad, potatoes

p.s. I had a B&B and I use to do 8-10 pies, and freeze them. It was my guest favorite
