I tried peeling and eating raw sweet potatoe today and really liked it. It is not sweet and reminds me of a regular raw potatoe but does not have the starch in it like a regular potatoe. It is also quite filling. Any other suggestions for quick eats that are raw and easy - besides fruit???
I bought the NESCO dehydrator a couple weeks ago at Bed Bath 'n Beyond. It's only $60. The cookies are my first recepie in the dehydrator and the food processor I just bought.
Apple Cookies:
2 pounds apples (cored and peeled)
1 cup agave nectar
1 3/4 cups almonds (ground in a food processor)
1 1/4 cups raisins
1/4 cup cinnamon
In food processor slice half of the apples with the slicing disc. Transfer to mixing bowl. Slice the remaining apples using the shredding disc. Add those apples to the mixing bowl with the sliced apples. Add the remaining ingredients to the mixing bowl and mix with a spatula. Use your hands to press the mixture into about 20 round flat cookies, about a couple inches thick. Dehydrate at 105 degrees for approximately 24 hours. Enjoy!
Check your local Craig's List...a couple of weeks ago I bought the Nesco
FD 61 (with thermostat control), brand new, still in box, for a cool $10.00! Also just bought, a
CraigsList listing of a Presto Professional Salad Shooter, brand new (all 5 blades in original packaging!) for a $5.00 bill! I am going to use, right now, to slice and grate the apples for this yummy sounding cookie.
Will check back on how they both turned out...the Presto AND the Apple Cookies!
