Ever since I cut all processed food from my diet and started using pure sea salt or kosher salt, I started exhibiting symptoms of iodine deficiency. (I'm not a big seaweed fan, and wild fish is so darn expensive that we eat very little of it.) My theory is that my body was so used to high levels of iodine, especially in sodium-enriched processed food, that it's more like iodine withdrawals rather than a deficiency, since a true deficiency would be rare. I eat totally organic foods, and don't believe in keeping track of vitamin or nutrient counts, instead believe that my body will produce whatever it needs. But I'm always freezing, spacing out a lot, and have headaches, muscle cramps, fatigue, all the symptoms of goiter. I'm wondering if my theory could be correct, and if there's any short-term remedy of a supplement or something I could take to re-balance my body, which is functioning good otherwise. I prefer to stay with unprocessed, organic vegetable and fruit diet, with little carbs and organic grass-fed animal products only once a month or so.
