One of my struggles on healthy eating is being creative with meals. I hate to eat the same things too often. Cook books are so formal and have ingredients I never heard of or am missing. I would love some real people, real food, meal ideas!!!
Vegetarian and non-vegetarian, raw, cooked...are all welcome!

So, yesterday for dinner I had sknls, bnls chicken thigh sauted in olive oil with onions, red peppers and garlic, with romaine, cheese and avocado and 1 corn tortilla. What did you have?

PS. Let's try to keep the dietary advice to other posts and just share meal ideas, please!!! Many of us disagree on what is healthy to eat, but let's get a variety of meals real people eat across the board. I seriously want to try some vegetarian or raw dishes since I get soooooo tired of cooking and can use more non-boring veggies in my diet :) Gracias!

I even cooked a halibut carcass i got from a local fish mongeryou can usually get them free if you leave your number and bug them). I cooked the head,fins everything and frooze the stock for cooking.

IMPORTANT.... Don't cook this in the house like i did,your house will smell for days. Next time i'm using the camp stove and doing it outside the back door lol.
Debbie, I have to pick your brain on making such good lunches for hubby to take to work. I barely get food on the table for the kids, poor guy, lol!

ok I will share some of my good ideas later. i'm running out and the day is already getting away from me. john loves his lunches. the guys at work are always like looking and drooling over his lunch. He dosen't mind the same things though so that makes my job super easy. But just to spice it up i vary it. i even put little love notes in his lunch sometimes,or a (junky treat he dosen't expect) although he rarely eats the "junk" that always shocks me,man if that was in my lunch i would eat it first...honest truth!!! i'll log on later and share my simple ideas.

I haven't forgot about you! I am going to compile a list of things that are quick and easy that guys will eat. (i actually thought of making a lunch cook book once)...i just see time is slipping away. Just a quickie though for what i packed him today. A sandwich on 16 grain sprouted bread(i keep it in the freezer and pull out 2 slices every morning) this way it helps keep the sandwich cold and the bread dosent get moldy sitting around in the cubbard. I rarely eat bread so the freezer keeps it from getting thrown out 1/2 way into the loaf. I put mayo and mustard roasted chicken and baby greens on it. My hot home made soup. A tiny slice of home made sour cherry pie i made last night. A sliced apple. Some organic dark sweet cherries we picked up at the farmers market. mixed sprouted nuts,v8,celery,carrot sticks with peanut butter and ranch tubs. Salt and vinegar chips (1 actual serving). All this was 98 % organic. He dosen't ever eat all his lunch. Mostly the fruit,sandwich and soup. all the other stuff is bonus. Every week he has lost a tiny bit of weight. He wants to loose 10 lbs. (which i don't think he needs) He is getting his private pilot licence and can fly cooler planes at a lighter weight.

That sounds good.I know what you mean.I feel like I want something different too.I will let you know.last night I had boneless chicken on the grill with chicken and ribs sauce,corn,and baked potato.It was good.Most of the time for supper I have to have a baked potato with my meal.I crave for one.But not when I have spaghetti,lasagna,or etc, of course.hee-hee

I had a piece of cold boiled chicken and a salad with tomatoes,radish and some kind of nasty sour tasting dressing that is suppose to be good for you. Will probably have the same thing tonite and tomorrow nite too until it is all gone. I use to have potatoes a lot but they have a lot of carbs in them so they are out and don't eat them much at all. OH--I did have a couple of straw berries and grapes and blue berries after. What I really want is mashed potatos with hamb. gravy and corn---lasagna would be good too !!! Almost everything I know how to cook comes with some kind of gravy. Since all of that is out now I have learned to eat a lot different. Sorry--no help here with cooking healthy meals---most everything gets eaten raw and cold now. Some days I would give my right leg for a good HOT meal with all the trimmings !!!!

Bobby---that really tickled my funny bone !!!!!!!!!!!!!! I have been meaning to get me some of that Mrs Dash stuff. I use to have some. I do add all kinds of spices to the water when I boil it. there have been times that I was real tempted to make up some noodles and have me some home made chicken noodle soup. I was looking at your (M) stuff earlier. That seems to be real close to some other stuff I have taken before and really liked it. Put a little kick in my (giddy-up) !! Don't sound like you need any more of that though--ha ha---that stuff must be workin over time for you !! Since you will be 61 in Aug--I think you said ---- you will have caught up with me. Spice up my life huh ---- as soon as I retire I will be adding lots of spice !!! gonna get the h---- out of here that is for sure. NO more cold winters for me and my dog---I will be singing--go granny--go granny--go granny go !!! Might need some (super juice) though

Bobby-- why I choose to boil the chicken. It is something I started doing a while back cuz I thought it would get more of the fat off it,even though I take the skin off. I really like my chicken fried with lots of spices.

Weird that you would call me Vic----that is what everyone that knows me well calls me---nothing like making me feel right at home !! Thanks !! Guess I remember you said you were going to be 61 in Aug because my oldest son will be 42 Aug. 5th. Leo's are real (people) persons--Lots of fun, weird sense of humor and people seem to be drawn to them. Everyone in school liked my son--no matter if they were jocks-nerds-hoods--teachers. His two bothers tried to be like him but just could not pull it off !! Anyway----thanks for the info on the Mrs Dash--I thought that was about the cheapest spice out there !! We do have a Sam's Club here that I am a member to.
Have you ever tried making Pollo Guisado (P.R. version of Chicken Fricase/ Stewed Chicken)? A big secret of Puerto Rican cookery is sofrito*. It's used as a flavor base for many dishes like arroz con gandules and even to marinate roasts.

Pollo Guisado
First season chicken with adobo, olive oil, 1 Tb vinegar, 3 Tb mashed garlic for at least 1 hr,
Saute chicken pieces in olive oil till brown, set aside.
Next, saute the sofrito for about 3-4 minutes, then add the chicken, 8oz tomato sauce, 1 cup broth (or white wine), 1 bay leaf (if you have it), 8 olives stuffed w/ red peppers (optional), 1 cup diced potatoes, 1 cup chopped carrots, salt to taste.
Cover and cook medium heat for 35 min or till chicken and veggies are tender.
Serve as a soup, or over rice or other.

*Sofrito (large batch)
2 green bell peppers, seeded and chopped
1 red bell peppers, seeded and chopped
10 ajies dulces peppers, tops removed
4 onions, cut into large chunks
3 medium heads garlic, peeled
5 bunches cilantro with stems
olive oil
DIRECTIONS
In a food processor, combine green peppers, red peppers ajies dulces, onions, and garlic and a couple Tb olive oil. Add cilantro and a couple more Tb olive oil to keep smooth. Process to the consistency of semi-chunky salsa (not watery). Place in a ziplock freezer bag or spare containers, and use as needed, or freeze in portions.

Whole Foods has lasagna made with artichoke flour, maybe cuts down a bit on the bad carbs. Load it with healthy veggies, quality ground beef (or not), whole milk cheeses (pref organic) ,low-sugar or homemade marinara sauce and it can be perfectly healthy! Since I avoid wheat, I use spaghetti noodles made with quinoa, very good, don't miss the other at all, esp. once I pour on the alfreado sauce and veggies.
